Chocolate Dark Malt is produced by roasting arrow malt.
The amylolytic activity is zero. The amount of fermentable extract is low.
"Chocolate" refers mainly to the color of the malt rather than its taste.
Chocolate Dark Malt is mainly used in ports and stouts, but can also be used in any dark ale.
Chocolate Malt contributes to roasted flavors and aromas with hints of dark chocolate and coffee. Already at low doses there will be a noticeable increase in color along with changes in taste and aroma.
