Melanoidinmalt-Weyermann Melanoia is used to improve taste stability, the phylliness and the rounding of the beer colour. It is often described as being similar to other German malts, such as Munich and Vienna, because they also have high melanoid levels, but with more arom, and sometimes used to increase the taste of the oak and noodontics. Chones of honey are making themselves known.
Melanoid inground is good to use in the dark, red beer and Scottish ales, and can help to create a more authentic German beer.
